Gnoblars were a tricky addition since they don't really fit in the established beastman/minotaur fluff. However, an army would need siege weapons (stone throwers) and beastmen lack the knowledge/skills to make those (afaik). So enslaving some goblin clans seems like a logical choice.

As an added bonus you get far more goblins than you need, so you can use them as supporting troops/cannon fodder too. Add some beastman overseers to keep them in line and a minotaur for overall command of the unit. Can't imagine said minotaur would be too happy about its new role though...
