Created this in 2017 but have forgotten to share it here. Try my best to describe below.
Please print at min 50% infill or best yet 100% infill because I don't how much of force you gonna excert at those. So far mine didn't brake yet
Some of the articles you can find about making the circuitry that reads the load cell signal for your G27 as below. If i rmbr well each of this circuit has its own hiccup such as spike(at least for me, but maybe not you), in the end i got a friend to custom the board for me with very similar components but much smoother signal and adjustment.

The load cell i used is a generic 20kg one that you can get anywhere. Length of 130mm x 30mm. Has mounting holes of 15mm apart horizontal
