Viscotta Roller Cookie cutter

I designed this after watching my kids and wife rolling viscotta cookies. They are a family Italian cookie that is rolled into a thin, long log which is them cut to small 1-1.5 inch lengths and then baked. After noticing a very inconsistent length, I decided to make a cutter that will cut them into perfect length cookies every time.
