Knife sharpener
The knife does not need to be re-clamped. simply loosen the screw in the centre of the holder, turn the holder 180 degrees and tighten the screw again.
You will need some screws (cylinder head, countersunk head, and pan-head) and square nuts. All screws and nuts are M3. The images show exactly which screws go where.
You also need an aluminum tube with an 8 mm outer diameter and 6 mm inner diameter (available at a hardware store: minimum length 70 cm). One 50 cm piece and one 20 cm piece are required. The pin (#4) is pressed into the end of the tube (alu rod 20cm) that is clamped into the base (#14) to prevent the tube from being crushed.
Suitable sharpening stones 150 x 20 mm.
Please note:
Components #1, #7, and #13 are assembled to create the movement of the grinding rod. These components should have minimal play while still moving smoothly.
To achieve a good result each time a knife is clamped, an electronic angle gauge is recommended.
